Special Olympics Maryland athlete leaders will host a monthly show where they will demonstrate one recipe live in the kitchen. Special Olympics Maryland athlete leaders will host a monthly show where they will demonstrate one recipe live in the kitchen. The recipe and ingredients can be found below:

Egg Roll in a Bowl

Makes 6 servings

Ingredients

1 tsp. Minced ginger

4 ½ cups packaged coleslaw mix

½ cup shredded carrots

3 medium scallions, chopped.

3 tbsp low sodium soy sauce

1 ½ tsp sesame oil

1 lb ground sausage, ground pork or ground chicken  (ground pork is the most genuine choice for egg rolls)

 

Directions:

  1. Brown the meat in a medium nonstick skillet until cooked all the way through and then add the ginger.

  2. Add soy sauce and sesame oil.

  3. Add a full bag of coleslaw, stir till coated with sauce

  4. Add 1/2 bag of shredded carrots, stir until coated with sauce. Shredded carrots are optional since most coleslaw mix bags come with shredded carrots already in them. I just throw some extra in there to bulk the dish up a bit.

  5. Add chopped scallions, mix thoroughly.
